Boiled eggs with a perfect yolk

When you boil eggs—especially if you’re making devilled eggs—you need to get the yolk right in the middle. So here are some pointers. Only add the eggs to the water once it has boiled, not before. For the first three minutes, stir the water in circles using a wooden spoon to keep the egg moving—this should stop the yolk from setting at either end. And keep your eye on the timer: any more than 10–12 minutes on a medium heat and you’ll get a greenish yolk instead of a bright yellow one.
