Don’t throw food away! With this maxim very much in mind, we recently shared some tips on how to organise your kitchen cupboard, fridge and weekly shop, as well as cooking and using food up. Now it’s time to get your creative juices flowing to give your leftovers a new lease of life.

Burritos

After the weekend, your fridge is full of leftover beef stew, roast chicken, steaks… One way of using food up is to make burritos. Finely chop some pepper, onion or any other fresh vegetables. Sauté and add the meat. You can also add some herbs and spices and some tomato sauce if the leftovers don’t have their own sauce. Serve alongside the tortillas on the table and make the burritos there and then to avoid them going soft.

If the family hasn’t polished off the week’s vegetables, don’t let them go off: make a quick, easy and healthy soup! Wash the vegetables and lightly fry in a little extra-virgin olive oil. Add salt and pepper, cover with water and boil for about 20 minutes. Blend, add some single cream or cream cheese and blend some more to make a smooth mixture.

What should I do with the lentils?

So, you’ve got lots of leftover lentil stew, but you don’t fancy taking it to the office for lunch. Here’s how to create two new meals: chop the chorizo into small pieces and mix with some tomato in a pasta dish; give the rest a whiz in the blender, add some curry powder and, hey presto!, you’ve got a delicious sauce to go with some grilled chicken breasts.
