Don’t worry, here are three recipes for healthy and  tasty pastries!

No-one says no to a tempting sweet morsel. And if it’s homemade, even better! Treat yourself to these three guilt-free pastry recipes that are a hit with young and old alike.

Date brownies

You’ll need 50 g of cocoa powder, 600 g of walnuts, 600 g of stoned dates, a spoonful of extra-virgin olive oil, a pinch of salt and ½ teaspoonful of vanilla essence. First throw the dates into the food processor and chop the walnuts into small pieces by hand. Put the dates, walnuts and the other ingredients into a bowl and stir well until you get a smooth paste. Turn the mixture into a mould and smooth over the top with a spatula. Sprinkle some chocolate shavings on top and chill in the fridge for an hour.

Apple muffins

You’ll need 150 g of rolled oats, 160 g of baking flour, ¾ teaspoonful of bicarbonate of soda, 1 teaspoonful of baking powder, 1 teaspoonful of cinnamon, a cup and a half of stewed apples, 125 ml of milk, 3 spoonfuls of extra-virgin olive oil, 100 g of agave syrup and 1 egg. Preheat the oven to 200 °C and mix the flour, baking powder, oats, bicarbonate of soda and cinnamon together in a bowl. In another bowl, mix and beat together the milk, egg, stewed apple, extra-virgin olive oil and agave syrup. Add the liquid mixture to the solid one and stir well, without beating, until you get a smooth paste. Turn it into muffin moulds and sprinkle some oats on top. Bake for about 20 minutes.

Banana and coconut cookies

You’ll need 180 g wholemeal flour, ½ spoonful of baking powder, ¼ spoonful of bicarbonate of soda, 4 spoonfuls of rolled oats, a pinch of salt, 100 g of brown sugar, 1 large banana, 30 ml of extra-virgin olive oil and some grated coconut. Mix the flour, oats, salt, baking powder and bicarbonate of soda together in a bowl. In another bowl, mash the banana up (use a blender if necessary) and add the brown sugar and extra-virgin olive oil. Combine the two mixtures and stir well with a wooden spoon until you get a thick paste. Cover with clingfilm and chill in the fridge for at least 30 minutes. Preheat the oven to 170 °C and place some baking paper on a tray. Roll the mixture into balls, arrange them on the baking paper and squash them down with your hand. Leave enough space between them for them to spread. Sprinkle some grated coconut on top and bake for about 10 minutes.
