Baked pumpkin with balsamic vinegar and spices
* 500 g sliced pumpkin
* A dash of Borges extra-virgin olive oil
* Salt and pepper to taste
* A pinch of turmeric
* A spoonful of sesame seeds
* A spoonful of pumpkin seeds
* A spoonful of Borges Modena balsamic vinegar
* A spoonful of honey
Step by StepPreheat the oven to 220 ºC, arrange the sliced pumpkin on an oven tray and drizzle with extra-virgin olive oil, salt and spices (we’ve opted for turmeric, but alternatively you could use a combination of herbes de Provence, thyme, rosemary and even a dash of cumin to really give it some serious flavour).
Bake for about 20–25 minutes, depending on the oven. Take out of the oven, add the sesame and pumpkin seeds and bake for another 10 minutes. Take out of the oven and cover the pumpkin with a honey and balsamic vinegar dressing.
