Easy carrot cake

Ingredients
* 2 eggs
* 110 g of sugar (or 4 dates)
* 150 ml of Borges olive oil
* 3 grated carrots
* 150 g sifted flour
* 10 g of baking powder
* A pinch of salt
The frosting
* 125 g of butter
* 250 g de soft cream cheese
* 70 g powdered sugar
* A tbsp. of vanilla extract

Step by Step
We whisk the eggs and mix them with the sugar until they get an off-white colour. Gently, we add the olive oil. Then, outside the mixer, we mix the dry ingredients: the flour, the salt and the baking powder. With a mix tool we remove gently. Finally, we add the grated carrot.If we use a big platter, we will cook it for twenty minutes at 180ºC. We let it cool and we make the frosting. We just need to whisk the ingredients until we get a thin pastry. With an icing bag, we decorate the carrot cake.
