Healthy and tasty lentils with vegetables in three steps
* ½ onion
* 1 red pepper
* 1 carrot
* 1 large peeled, seeded tomato
* 400 g quick-cooking lentils
* Borges Extra-virgin olive oil
Step by StepStep 1: gently fry the vegetables, starting with the onion, in a pan with a little extra-virgin olive oil.
Step 2: when they’re cooked, add a little water and blend.
Step 3: put the lentils in a pan, add the blended vegetables and cover with water. If you like, you can add a ham bone for extra flavour. Cook for about 20 minutes.
