Marble cake with cocoa
* 4 eggs
* 100 ml (3 US fl oz) sunflower oil
* 180 g (6 oz) sugar
* 130 ml (4 US fl oz) walnut drink
* 220 g (7.5 oz) flour
* 15 g (0.5 oz) baking powder
* 50 g (1.5 oz) cocoa powder
Step by StepSeparate the egg yolks and beat with the sugar to get a whitish mixture. Add the sunflower oil and walnut drink. Beat well.
Sieve the flour and baking powder and add to the mixture.
Beat the egg whites to stiff peaks and carefully fold into the mixture. Now split the mixture in half and mix the cocoa powder in with one half until it turns dark in colour.
Line a mould with baking paper and spoon the light-coloured half of the mixture on top. Then add the dark-coloured half and stir with a spoon to create marble swirls. Bake at 180 ºC for 30 minutes.
Leave to cool before serving.
Nutritional TipsCocoa powder here refers to pure dark cocoa powder. It isn’t hard to find, but if you want you can use drinking chocolate instead. Although inferior in quality—you’ll find the mixture won’t go as dark—it is still perfectly acceptable.
