PIG’S TROTTERS WITH NUTS
* 2 pig’s trotters, boiled
* 500gr onion
* 500gr tomato
* 1 glass of white wine
* 1 glass of water
* 50gr Borges Almonds
* 1 slice of bread, toasted
* 1 spoonful of sundried red pepper paste
* Borges Extra Virgin Olive Oil
- * Place half pig trotter with some sauce and a touch of fennel or dill.
Step by StepRoast the almonds with oil and salt.
Prepare a stir-fry with onions and tomatoes. Halfway through the cooking time, add a glass of white wine, salt and pepper. Put the boiled pig’s trotters in the pan and add a glass of water. Using a mortar, crush almonds, red pepper paste and toasted bread with olive oil and add this blend to the pan. Cook it over low heat for 30 minutes.
Nutritional TipsAlthough they can be found anywhere in the world, pig’s trotter are typically Mediterranean. Crushed nuts add flavour to the dish as well as providing a good nutritional supplement of fibre and minerals.
