Caramelized onion works wonders with any dish, and a great way to make it is to use Modena balsamic vinegar.

Simply julienne the onion and fry in extra-virgin olive oil over a medium heat. Once it begins to turn golden, add a couple of spoonfuls of cane sugar (for roughly 500 g of onion) and cook over a low heat until the sugar melts completely into the onion. Then add about 75 ml of Modena balsamic vinegar and let the mixture slowly reduce.

Once it’s ready, you’ll have the ideal complement for any meal!
