Tasty chicken and vegetable sandwich (for kids and grownups)

Borges - chicken and vegetable sandwich

Cooking with kids running wild can be a real challenge. But here’s a way to keep them nice and quiet while they help you make a fun and healthy chicken and vegetable sandwich. You’ll need the following ingredients:

* Sliced bread (if you make your own bread, throw in some walnuts)
* Chicken breast
* Onion
* Green peppers
* Cherry tomatoes
* Borges aromatic olive oil with fried garlic or with black olives
* Mustard or mayonnaise
* Salt and pepper to taste

To make this tasty sandwich, first boil the chicken breast in salted water and then leave to cool. If you like, you can also add some vegetables such as carrots, potatoes or onion to the water. Don’t throw the water away, as it will make lovely stock.

Once you’ve strained the chicken and it has cooled down, get the children to wash their hands and sit them down so that you can show them how to shred the chicken meat. That should keep them entertained for a while, leaving you free to get on making a sofrito with the onion, peppers and tomatoes. We recommend using aromatic olive oil with fried garlic or with black olives to give it some extra flavour. The vegetables need to be chopped up nice and small so that they will bind in with the meat.

When the kids have finished shredding the chicken, add it to the sofrito and cook for a few minutes so that all the ingredients release their flavours. Now all you need to do is make the sandwich: spread some of the chicken and vegetable mixture onto a slice of bread, spread some mustard or mayonnaise onto another slice of bread and put the two together. If you’re feeling really hungry, you can make a double-decker sandwich with two layers of filling and three slices of bread. Et voilà, a delicious sandwich that will go down a treat, especially with kids eager to taste their own handiwork!
