  • 500 g spaghetti
  • 1 kg chopped tomatoes
  • 300 g minced beef and pork
  • 2 good-sized fresh sausages (with herbs or any other variety)
  • 2 cloves of garlic
  • Half an onion
  • Salt
  • Pepper
  • Sugar
  • Extra-virgin olive oil
  • Basil
  • Breadcrumbs
  • Milk
  • 1 egg
  • 1 dash of red wine

    There are dozens of pasta recipes immortalised on the big screen. We already saw some in our post on the top 10 pasta dishes in film, including the shared spaghetti in Lady and the Tramp and the famous macaroni timbale in Il Gattopardo. Today’s recipe comes from The Godfather saga: the spaghetti that Clemenza shows Michael Corleone how to make. Here’s our own mouthwatering version:

    Mix the mince, egg, 2 spoonfuls of breadcrumbs, 2 spoonfuls of milk, salt and pepper in a large bowl. When you’ve got a smooth mixture, make a series of meatballs. Fry in extra-virgin olive oil and set aside.

    Cut the sausages into pieces and fry. Put by with the meatballs.

    To make the sauce, fry the finely chopped onion and garlic, taking care not to burn the garlic. Add a dash of red wine and let it reduce. Add the chopped tomato, salt, pepper and a little sugar to balance out the acidity. Cook for a few minutes on a medium heat.

    Dunk the meatballs and sausages in the sauce. Let it all cook for a few more minutes, add some basil, stir and take off the heat.

    Serve on top of a portion of well-strained spaghetti.
