TUNA WITH COUSCOUS
* Red Tuna
* Red pepper (fresh or canned)
* Borges Extra Virgin Olive Oil
* 1 can of peas
* Fish stock
* Tomato sauce
* White wine
Paso a pasoPrepare the couscous in a bowl according to the instructions on the package.
Dice the tuna. In a pan or a cooking clay pot, lightly fry the tuna (1-2 minutes each side) in olive oil and set aside. Using the same oil, sauté chopped onion and red pepper. Add the garlic, then the tomato sauce and finally the canned peas. Cook over low heat for a little time before you add each ingredient.
Add some white wine and the fish stock. Cook for approx. 5-10 minutes over low heat and then add the tuna dices. Season and cook it for another 5-10 minutes until ready.
